Lemongrass, also known as Cymbopogon, fever grass is a tropical herb.
This plant grows in dense clumps. It also has several stalks and slender blade-like leaves which droop towards the tips. The leaves can reach 3 feet long and 1/2 inch wide. They taper at both ends and their tips gracefully arch. Normally, the edges of the leaf are very sharp.
The flavor is quite light and does not overpower other flavors in a dish. It also adds a slightly sharp and tangy taste without the bitterness of the lemon.
Lemongrass is also very fragrant, with an aroma that adds its own hint of flavor to dishes in which it is used.

Lemongrass is easy to grow well in humid, warm environments with full sun, plenty of water and well-drained, fertile soil.
In Vietnam, lemongrass is planted through out the country.
